Here are a few delicious recipes that can be made whilst following the Specific Carbohydrate Diet, many more recipes can be found online which other SCD users have decided to create for themselves - which include lots of new ideas and helpful guidelines when cooking for a new diet. I hope you find something tasty to try! (*Please note* most of the following recipes are in American weights and measurements).

HOMEMADE PANCAKES

Ingredients

1-1/4 cups almond flour (almond flour is 'ground almond nuts')
1/2 cup water
1/4 teaspoon salt
1/4 teaspoon baking soda
2 whole eggs
1 egg white

Instructions

1. Blend all ingredients together till smooth.
2. Cook on heated pan coated with 1 teaspoon of butter.
3. Top with cinnamon and honey and voíla!

CHICKEN MEATBALL APPETIZERS

Ingredients

2 1/2 cups minced cooked chicken breast
3 tablespoons finely chopped onion
3 tablespoons finely chopped celery
2 tablespoons finely chopped carrot
2/3 tablespoons nut flour
1 egg white
1/2 teaspoon sage or poultry seasoning
pinch salt
pinch pepper

Instructions

1. Combine all ingredients and mix well.
2. Roll into balls and place on a cookie sheet.
3. Bake at 400 degrees F (220 C) for 10 minutes or until lightly browned.
4. These are good plain or dipped in mustard. Hot or cold.

BANANA MUFFINS

Ingredients

6 eggs
1/3 cup honey
1-1/2 cups walnuts
1 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon vanilla
1 to 1-1/2 bananas

Instructions

1. Put egg, honey, and walnuts in processor and blend 4 to 5 minutes.
2. Add remaining ingredients except salt and process until smooth.
3. Add salt and process a few seconds.
4. Scoop batter into paper-lined muffin tins.
5. Bake 350 degrees F for 30-35 minutes.

PORK CHOPS AND BAKED APPLES

Ingredients

2 pork chops or pork steaks
2 medium apples
cinammon
butter
honey

Instructions

1. Brown pork chops (or pork steaks) in a fry pan.
2. Peel, core, and slice apples. Place them into the bottom of a small casserole dish.
3. Sprinkle the apples with cinnamon and dot with a small amount of butter (butter is optional since the meat probably contains sufficient fat).
4. Drizzle with apples with honey.
5. Lay the meat on top of the apples.
6. Bake covered at 400 degrees F (220 C) for 20 min. Remove top and bake until pork is done but still moist (approx. 30 additional minutes).
